Spanish Lentils







I was taught this dish by my Spanish friend Pedro. It has most of the classic ingredients found in Lentil Dishes and perhaps it for that reason why it is simply delicious! It is a light dish so makes a perfect lunch in the office. Pretty healthy as well...!




1. Heat some oil in the pan and fry the Garlic and Onions.  Add the leak


2. Add the Chicken Stock (or use a stock cube if you're in a hurry) and Thyme. Stirr through the Red Wine and the lentils. (add chick peas and for extra texture). Add a bit of vinegar for extra taste.


3. Simmer for 30-35 minutes. Add the Chorizo and the Parsley and simmer for another 5 minutes.

Ingredients (serves 4)


* 300gr green or brown lentils

* 4 sliced onions

* 2 leeks

* 3 garlic cloves

* 1 liter of chicken stock (stock cube)

* 1/2 a bottle of red wine

* 150 gram chorizo

* a hand full of roughly chopped parsley

* 4 spings thyme


Optional add-ons

* 50 grams of chicken pieces

* table spoon of white wine vinegar

* 25 grams of rice
